Cold weather season is upon us, and that means hearty meals like stews, soups, and chilis! I came across this recipe from the Certified Angus Beef folks for Chili Colorado, which has no beans in it. The deep mahogany color of this dish comes from the dried chilis that are rehydrated and blended together with the beef stock they had been steeping in.
When this dish comes together after several hours in the slow cooker, you have a spicy, tender, rich beef chili that goes great wrapped in warm tortillas. Happy cooking, and bon appetit!
